Avocado on toast is a delicious go-to breakfast. Actually, a go-to for any meal really! I love a good avo, but sometimes too much of a good thing is, well, too much of a good thing.
I really love to break up the smooth, creamy flavour and texture of avo with a little something special. So I’ve come up with three deliciously different ways to eat avocado on toast which are anything but boring!
1. Avo on toast with rocket, feta and dukkah.
I love to use sourdough for avo on toast. I think it’s just the perfect bread for the job!
I got this beautiful pistachio dukkah from Woolworths, but you could easily make your own dukkah too if you had time. My Grandma actually gifted me some homemade dukkah for christmas this year and it was devine. I might have to steal her recipe!
Layer toasted sourdough with fresh rocket, slices of avo, a few crumbles of feta, and a sprinkle of dukkah. I also love to finish it of with a drizzle of fresh lemon juice. So tasty!
2. Avo on toast with tomato, feta and blasamic glaze.
This is a pretty classic flavour combo, I reckon.
I used beautiful vine-ripened baby tomatoes, which are just packed full of flavour, and store bought balsamic glaze (although you could make your own).
Layer toasted sourdough, roughly mashed avocaodo, chopped tomatoes, crumbled feta, and finish with balsamic glaze. Simple!
3. Avo on toast with chilli, thyme and lemon.
For the adventure seekers who can handle a little heat!
Layer mashed avo, finely chopped chilli, a sprinkle of fresh thyme and a good squeeze of lemon juice.
